Back for a third time and another slight experiment based on improvements we felt could be made on CBI-2. We decided to lower the overall pH so we fermented 1 barrel that was pre acidified and blended it with another barrel of higher pH. Both barrels are first use sour barrels fermented with amalgamation II which is 100% brett. Likely dry hopped with nelson sauvin. Bottle conditioned in 750ml bottles for the first time.
