Since the spring of 1999 the 'Oude Geuze De Cam' has been brewing. For the Oude Geuze, young lambic, with at least a year of ripening, and old lambic, with a minimum of two years of ripening, are mixed according to the taste of the geuze. Once in bottle the final ripening stage follows. The result is a beer of spontaneous fermentation with a typical taste and nice head. This geuze is also described as rather dry, bitter and relatively less acidic.
