We love Vietnam and Vietnamese cuisine, so when the opportunity arose to spend time with our friends at 7 Bridges brewing in H?i An, we leapt at the chance and brewed a collaborative cucumber and coriander sour, Good Morning Vietnam, for a limited release, which we then entered in the Asia Beer Championships and it won a Bronze Medal for Best Sour Beer. When we got back to Hong Kong, the creative juices kept flowing, so we decided to build on those flavours to make a sour inspired by the delicacy and complexity of Vietnamese pho. With cucumber, lime, coriander, a touch of ginger, star anise and cinnamon, this is a savoury sour that definitely isn’t a pho!
