We experiment not only with hops and malts, but also with different yeasts. But one specific yeast we use for the very first time. DDH Simcoe x Amarillo Kveik IPA – "Kveik", that is properly pronounced "kuh-vike", is a Norwegian word, that describes a specific Farmhouse yeast culture from Norway. Norwegian brewers have been using this yeast for ages now, and now it is time for us to try Kveik. Proper fruit esters, that somehow remind of some notes of apple. But traditional USA hops Simcoe and Amarillo add even more fruit aromas and slight spruce bitterness.
