Since the spring of 1999, the "Oude Geuze De Cam" has been drunk. For this Oude Geuze, young lambic, with a minimum maturation of one year, and old lambic, with a minimum of two years maturation, are mixed according to the taste of the Geuzesteker. Once in the bottle, the final maturing phase follows. The result is a spontaneous fermentation beer with a typical taste and nice head. This geuze is also described as fairly dry, bitter and relatively fewer acids.
